Peach & Tomato Pasta Sauce (yes really!)


  • 12 oz. pasta
  • 5 cloves garlic, thinly sliced
  • 1 tablespoon olive oil
  • 1 pint grape or cherry tomatoes
  • 2 pounds peach, pitted and sliced or chopped
  • ½ cup chopped basil
  • salt and black pepper
  • crushed red pepper or 1 jalapeno
  • chopped toasted almonds


  1. cook pasta—drain-reserve ¼ cup past water
  2. in skillet cook garlic over low to medium heat in hot oil – 1 minute
  3. add tomatoes and cook uncovered about 2 minutes
  4. add peaches and cook until just for – about 4 to 5 minutes
  5. stir in olives, basil, salt & pepper, and crushed red pepper
  6. heat thoroughly then add the mixture to the cooked pastas and reserved water
  7. sprinkle with almonds
